My Food experiments

My experiments with Food: These days I have been experimenting a lot and I would love to keep record of these first timers..

1. Cheese Garlic Bread: Pari loves this extremely…Her everyday evening snack.  I just microwave butter & chopped garlic for a minute.  Apply butter & garlic on the French bread (or any other bread). Evenly spread Mozzarella Cheese on the bread. Heat on tava or in the oven (if making more…) till Cheese melts. For added flavors, at times, I used oregano.

2. Tomato Salsa: The first Mexican recipe, I tried is Fresh Tomato Salsa from this wonderful site. Served with Nachos in the recent get-together at home, & it was a hit. everybody loved it. I made 2 versions:

(1) Fresh tomatoes de-seeded and finely chopped, I didn’t want it too spicy, I added red & yellow green peppers, green chillies, onions, fresh lime juice, & oil.

(2) In the second version, I used the same ingredients as above. & also added cream cheese & ranch salad dressing to tone down the chilly.

3. Stuffed Jalapeno peppers: My most risky experiment, getting my husband to eat this pepper, the most challenging task :). His first expression was worth a million smile. It’s very-very difficult for him to handle peppers of this intensity & his comments when asked if you want me to repeat this recipe: Next time try with green capsicum, not with jalapeno :). I used recipe from this wonderful site.

4. Guacamole : Again recipe from this authentic Mexican recipe site. Served with Nachos. It’s must on my repeats list.

5. Mini Sub Sandwich: Mix all these: Chopped onions, yellow, red, green peppers, romaine lettuce, salt, lime juice, black pepper, ranch dressing, Lightly toast the mini-subs with butter. Apply this spread along with shredded cheese and serve.

6. Brahmi Mocktail: Used the recipe from this wonderful site: Instead of strawberry syrup, I used Brahmi Sharbat. It was amazing.

Aaloo Puff

I am loving the oven … While exploring the internet, I stumbled upon this recipe of Veg Puff at this wonderful site Bhavna’s Kitchen.

I immediately bought Pepperidge Farm Puff pastry sheets, had aaloo-chokha (already in my fridge). Followed the recipe. Baked at pre-heated oven at 400 F for 20 minutes.  & Voila, it was ready ..& I was so thrilled to make this aaloo-puff on my own, which I used to gulp like anything in Bangalore. & my dear Pari was more than excited to help me as usual.

These are the pastry sheets.

It has been long time…

It has been very-very long since I visited my blog. Have so many updates. No idea where to start.. Well, it has been exactly a month in US, and those days of relocation troubles all on my head. It still haunts me :).

These days of unemployment, full time @home, with 4 YO no school, no friends,+ no maid 😦  life has changed a lot. To be on the toes everytime…for any demands. Need to be thoughtful all the time to keep Pari engaged. So, to begin with, I did my first cake with diligent help with Pari, and delicious cupcakes.. with my mom’s eggless cake recipe. I enjoyed baking as much as Pari did, and I loved spending so much of time with her.

myfirst attemptVery-very difficult for me to take pictures with Pari. She won’t let me click any picture. All these pics taken by Pari

cupcake-001 For my records, I used this recipe :

Sieve 2 cup All Purpose Flour, 1 cup(little less) powdered sugar, 1/2 cup milk powder, 1/2 tsp baking powder, 1/4 tsp baking soda. Melt 100g butter in microwave or in a double boiler. Mix it well in the dry ingredients, till its all like crumbly. Next add milk slowly and keep mixing till the batter is ready. Preheat the oven at 375º F for 10 minutes. Line the paper cups in muffin pan. Fill each cupcake half, to keep the space to rise.

Ice-cream Sundae

Posting this recipe from our New Year’s eve party. This was my first attempt on ice-cream sundae, & I loved it. Pari helped in making jellies, Hubby dear helped with strawberries, and voila !!! Here are the pics..I loved assembling it.
